Ingredients
  

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 1 chicken breast sliced
  • 1/2 red bell pepper sliced
  • 1/2 green bell pepper sliced
  • 1/2 yellow bell pepper sliced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp Cajun seasoning
  • 1 tbsp chopped parsley for garnish

Method
 

Step 1: Cook the Pasta
  1. Boil a large pot of salted water. Cook the penne pasta until it’s al dente. Drain and set aside.

Step 2: Sauté the Chicken
  1. In a large skillet, heat olive oil. Add sliced chicken and season with salt, pepper, and 1 teaspoon of jerk seasoning. Cook until browned and fully cooked. Remove and set aside.

Step 3: Cook the Vegetables
  1. If necessary, add extra olive oil to the same skillet. For four to five minutes, or until they are just beginning to soften, sauté the bell peppers and garlic.

Step 4: Make the Creamy Sauce
  1. Add heavy cream, cream cheese, and Parmesan to the skillet. Stir well until melted and smooth. Add the remaining jerk seasoning and adjust salt and pepper to taste.

Step 5: Combine and Finish
  1. Return the chicken and cooked pasta to the skillet. Mix everything until the sauce is evenly distributed. Let it simmer for 2-3 minutes so the flavors combine.

  1. Turn off the heat. If preferred, garnish with additional Parmesan and chopped parsley.

Notes
