Step 1: Prepare the Coating
- Mix flour, cornstarch, paprika, salt, and pepper in a bowl. In another bowl, beat the eggs. In a third bowl, combine panko and shredded coconut.

Step 2: Coat the Shrimp
- Dip each shrimp into the flour mixture, then into the egg, then into the panko coconut mixture. Press lightly to help the coating stick.

Step 3: Heat the Oil
- Heat oil in a deep pan over medium-high heat. Make sure the oil is hot enough before frying.

Step 4: Fry the Shrimp
- Fry coated shrimp in small batches for 2 to 3 minutes per side until golden brown and crispy. Remove and place on paper towels.

Step 5: Serve
- Serve hot with sweet chili dipping sauce.
