Step 1: Prepare the zucchini
- Grate the zucchini using a regular grater. Keep it ready while you chop the onions and garlic.
Step 2: Sauté the aromatics
- In a large skillet, heat olive oil on medium. Add the garlic and onion. Sauté for 4 to 5 minutes until soft and lightly golden.
Step 3: Slow-cook the zucchini
- Add the grated zucchini to the pan. Season with salt and pepper. Stir well, reduce the heat to low, and let it cook uncovered for 30 to 40 minutes. Stir occasionally and add a splash of water or veggie broth if it starts to stick. The zucchini will slowly melt into a soft, creamy texture.
Step 4: Cook the pasta
- While the zucchini is cooking, bring a pot of salted water to a boil and cook your pasta according to the package instructions. Drain and keep aside.
Step 5: Combine and finish
- Once the zucchini sauce is thick and creamy, taste and adjust the seasoning. Add chili flakes if you like a little heat. Toss the cooked pasta into the zucchini mixture and mix until the pasta is well-coated.
Step 6: Serve and enjoy
