  • 4 cups kale chopped, stems removed
  • 12 oz pasta fusilli or penne
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup Kalamata olives sliced
  • ½ cup red onion thinly sliced
  • ½ cup feta cheese crumbled
  • cup olive oil
  • 3 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste

Method
 

Step 1: Cook the pasta
  1. Bring a big pot of water that has been salted to a boil. Add pasta and cook until al dente. Drain, rinse with cold water, and set aside.
