Ingredients
  

  • 1 cup frozen spinach thawed and squeezed dry
  • ½ cup cream cheese
  • ½ cup crumbled feta cheese
  • 2 cloves garlic minced
  • ¼ cup onion finely chopped
  • 1 sheet puff pastry thawed
  • 1 tablespoon olive oil or butter
  • Salt and black pepper to taste
  • 1 egg beaten, for egg wash

Method
 

Step 1: Prepare the filling
  1. Heat olive oil or butter in a pan over medium heat. Add the chopped garlic and onion and sauté until aromatic and tender.
  2. After the spinach has thawed, squeeze off all the water and add it to the pan. Cook for 2–3 minutes.
  3. Take off the heat and pour into a bowl. Add cream cheese, feta, salt, and pepper. Mix everything until creamy and well combined. Let it cool slightly.

Step 2: Prepare the pastry
  1. Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper.
  2. Unroll the puff pastry sheet on a floured surface. Cut it into 12 equal squares.

Step 3: Fill and fold
  1. Put a dollop of spinach filling in the middle of each piece of dough. Fold the corners over the filling to make a puff or triangle shape. Press the edges gently to seal.
  2. Brush the tops with beaten egg for a golden finish.

Step 4: Bake
  1. Place the puffs on the prepared tray. Bake for 18–20 minutes, or until golden and puffed up.
  2. Let them cool slightly before serving; they smell amazing right out of the oven!

Notes

I store leftover spinach puffs in an airtight container in the fridge for up to 3 days. To reheat, I pop them in the oven or air fryer for a few minutes to bring back the crispiness.
