Step 1: Marinate The Chicken
- In a mixing bowl, combine the chicken with salt, pepper, garlic powder, paprika, and buttermilk. Cover the bowl and let it chill in the refrigerator for a minimum of 30 minutes.
Step 2: Prepare The Coating
- In another bowl, mix flour and cornstarch. Take the chicken out of the marinade and coat it thoroughly in the dry mixture.
Step 3: Fry The Chicken
- Heat oil in a skillet. Cook the chicken pieces in small groups until they are golden brown and crunchy. Drain on paper towels.
Step 4: Warm The Gravy And Corn
- Heat the prepared gravy in a saucepan. Steam the corn kernels until soft.
Step 5: Assemble The Bowl
- Place a layer of rice in a bowl. Add corn, fried chicken, pour hot gravy over the top, and sprinkle with shredded cheese.
Notes
Keep any remaining food in sealed containers in the fridge for a maximum of 3 days. Reheat in the microwave, separating the chicken to keep it crispy.
