Step 1: Prepare the filling
- Remove boudin sausage from casing. Mix sausage, cooked rice, and shredded cheese in a bowl until well combined.
Step 2: Shape into balls
- Scoop mixture and roll into small, bite-sized balls. Place them on a tray.
Step 3: Set up breading station
- In three bowls, place flour in one, beaten eggs in another, and crushed Hot Cheetos in the last.
Step 4: Coat the balls
- Roll each ball in flour, dip it in egg, then coat it generously with crushed Hot Cheetos.
Step 5: Fry the balls
- Heat oil to 350°F. Fry coated balls in batches until crispy and golden, about 3–4 minutes. Drain on paper towels.
