Step 1: Prepare the cucumbers
- Wash the cucumbers thoroughly. Cut them into bite-sized pieces or smash them lightly with the side of a knife for better flavor absorption. Sprinkle a pinch of salt and let them rest for 5 minutes.

Step 2: Make the dressing
- In a bowl, mix soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and red pepper flakes. Stir until the sugar dissolves completely.

Step 3: Combine and toss
- Drain any water released from the cucumbers. Add them to the dressing mixture. Toss everything gently until all cucumber pieces are evenly coated.

Step 4: Garnish and serve
- On top, scatter chopped green onions and sesame seeds. Serve immediately or chill for 10 minutes before serving for a more refreshing taste.
