Method
Marinate the Chicken
- Mix the olive oil, minced garlic, lemon juice, salt, and pepper in a bowl.
- Add chicken breasts to the marinade and let rest for at least 30 minutes, up to 4 hours.
Cook the Chicken
- Heat a grill or skillet to medium-high heat.
- Grill or sauté the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Slice the cooked chicken.
Prepare the Veggies
- Chop cucumber, tomatoes, red onion, and bell pepper.
- Toss the chopped veggies with a pinch of salt and a splash of olive oil and lemon juice.
Assembly
- In a bowl, layer the veggie mixture, then add sliced chicken on top.
- Sprinkle with crumbled feta cheese and drizzle with tzatziki sauce.
Notes
Store components separately to keep fresh. Reheat chicken gently before serving.
