Ingredients
  

For the Chicken
  • 1.5 pounds chicken breasts Pound to even thickness for even cooking.
  • 2 tablespoons olive oil Plus more for drizzling.
  • 2 cloves garlic, minced
  • 1-2 tablespoons lemon juice Adjust for preference.
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
For the Veggies
  • 1 medium cucumber, chopped
  • 2 medium tomatoes, chopped
  • 0.5 medium red onion, chopped
  • 1 medium bell pepper, chopped
Toppings
  • 1/3-1/2 cup feta cheese, crumbled
  • 2-3 tablespoons tzatziki sauce Drizzle on top.

Method
 

Marinate the Chicken
  1. Mix the olive oil, minced garlic, lemon juice, salt, and pepper in a bowl.
  2. Add chicken breasts to the marinade and let rest for at least 30 minutes, up to 4 hours.
Cook the Chicken
  1. Heat a grill or skillet to medium-high heat.
  2. Grill or sauté the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C).
  3. Slice the cooked chicken.
Prepare the Veggies
  1. Chop cucumber, tomatoes, red onion, and bell pepper.
  2. Toss the chopped veggies with a pinch of salt and a splash of olive oil and lemon juice.
Assembly
  1. In a bowl, layer the veggie mixture, then add sliced chicken on top.
  2. Sprinkle with crumbled feta cheese and drizzle with tzatziki sauce.

Notes

Store components separately to keep fresh. Reheat chicken gently before serving.
