Step 1: Beat the Eggs
- Crack the eggs into a bowl. Add milk (if using), salt, and pepper. Whisk until everything is well combined.
Step 2: Heat the Pan
- Place a non-stick skillet over medium heat. Coat the bottom with a little oil or butter.
Step 3: Cook the Patties
- Pour the egg mixture into round molds or simply ladle it into small round portions on the pan. Cover and let cook until the top is set, about 4–5 minutes.
Step 4: Flip and Finish
- Gently turn the patties over and continue cooking for another two to three minutes, or until they are cooked through.
Step 5: Serve Warm
- Remove from the pan and serve hot in sandwiches or on their own.
Notes
Remaining egg patties can be kept in the fridge for up to four days in an airtight container. To freeze, place them between parchment papers and store in a freezer-safe bag for up to 2 months.
