  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 cup red bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup mushrooms sliced
  • 1 cup spinach
  • 1 cup mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • Salt & pepper to taste

Method
 

Step 1: Cook the pasta
  1. Boil penne pasta in salted water until al dente. Drain and set aside.

  1. Heat olive oil in a skillet. Add garlic, onion, mushrooms, peppers, and broccoli. Cook until softened. Stir in spinach last.
