Step 1: Prepare the bread
- Preheat your oven to 350°F. Slice the French bread loaf in half lengthwise and place both halves on a baking sheet, cut side up.

Step 2: Make the crawfish filling
- In a skillet, melt butter over medium heat. Add garlic, onions, and bell peppers. Sauté until softened. Then stir in crawfish tails and Creole seasoning. Cook for 3 minutes.

Step 3: Mix the creamy base
- In a mixing bowl, combine cream cheese and mayonnaise until smooth. Add the sautéed crawfish mixture, mozzarella, and cheddar cheese. Stir until fully combined.

Step 4: Assemble the bread
- Spread the crawfish mixture evenly over the bread halves. Sprinkle extra cheese on top if desired.

Step 5: Bake and serve
- Bake for 20 minutes until golden and bubbly. Remove from oven, sprinkle parsley, slice, and serve warm.
