Ingredients
  

  • 4 ripe Roma tomatoes
  • 1 can 15 oz diced tomatoes (with juice)
  • 2 jalapeños seeded for mild heat, or leave seeds for extra spice
  • 1 small white onion chopped
  • 2 garlic cloves
  • 1 handful of fresh cilantro
  • 1 tablespoon lime juice
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon sugar optional, to balance acidity

Method
 

Step 1: Prepare the Vegetables
  1. Chop the onion, garlic, and jalapeños. Remove the seeds from the jalapeños if you want a mild salsa.

Step 2: Blend the Ingredients
  1. Add the canned tomatoes (with juice), chopped onion, garlic, jalapeños, cilantro, lime juice, and salt to the blender or food processor.

Step 3: Pulse Until Smooth
  1. Blend everything for about 30 seconds or until the salsa reaches your desired texture. You can make it smooth or chunky.

Step 4: Chill and Serve
  1. To allow the flavors to combine, transfer the salsa to a bowl and place it in the refrigerator for at least half an hour. Then, serve it cold with tortilla chips.

Notes

Remaining salsa can be kept in the fridge for up to five days in an airtight container. There may be some separation, so stir before serving.
