Step 1: Roast the corn
- Brush the corn with olive oil. Grill or roast in a pan until charred and smoky. Take off the heat and let it cool a little.
Step 2: Cut off kernels
- Using a sharp knife, carefully slice the roasted kernels off the cob into a large mixing bowl.
Step 3: Mix ingredients
- Add Greek yogurt, feta cheese, jalapeño, lime juice, cilantro, salt, and black pepper. Stir well until combined.
Step 4: Adjust flavors
- Taste and adjust lime, salt, or spice level as per your preference.
Step 5: Serve
- Transfer to a serving dish and top with extra feta or cilantro for garnish.
