Ingredients
  

  • 1 lb chicken breast boneless, skinless
  • 2 cups potatoes peeled, diced
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 bay leaf
  • 2 tbsp fresh parsley chopped

Method
 

Step 1: Sauté vegetables
  1. Heat olive oil in a large soup pot. Add onion, garlic, carrots, and celery. Sauté until aromatic and softened, about 5 minutes.

Step 2: Add chicken and seasonings
  1. Add chicken breast pieces, salt, pepper, and bay leaf. Stir well and cook until the chicken is slightly browned.

Step 3: Add potatoes and broth
  1. Add diced potatoes and pour in chicken broth. Stir in tomato paste. After bringing to a boil, lower the heat, and simmer for forty minutes.

Step 4: Add cream and finish
  1. Remove bay leaf. Stir in heavy cream and let simmer for another 10 minutes. Adjust seasoning and sprinkle fresh parsley before serving.
