Step 1: Sauté vegetables
- Heat olive oil in a large soup pot. Add onion, garlic, carrots, and celery. Sauté until aromatic and softened, about 5 minutes.
Step 2: Add chicken and seasonings
- Add chicken breast pieces, salt, pepper, and bay leaf. Stir well and cook until the chicken is slightly browned.
Step 3: Add potatoes and broth
- Add diced potatoes and pour in chicken broth. Stir in tomato paste. After bringing to a boil, lower the heat, and simmer for forty minutes.
Step 4: Add cream and finish
- Remove bay leaf. Stir in heavy cream and let simmer for another 10 minutes. Adjust seasoning and sprinkle fresh parsley before serving.
Notes
Bancheros Soup is best enjoyed with crusty bread or buttery garlic toast for dipping.
