Step 1: Cook the sausage
- The morning sausage should be cooked in a skillet until browned. Cut it into tiny pieces and put it away.
Step 2: Make the gravy
- In a saucepan, melt butter. Stir in flour to form a roux, then add milk slowly while whisking. Add salt and pepper. Cook until creamy.
Step 3: Prepare the pastry
- Roll out puff pastry sheets. Cut them into equal rectangles for pockets. Place them on a parchment-lined baking tray.
Step 4: Add the filling
- Spoon sausage, cheese, and gravy onto half of each pastry rectangle. Leave edges clear for sealing.
Step 5: Seal and brush
- Place another pastry rectangle on top. Seal edges with a fork. Apply beaten egg on top for a golden appearance.
Step 6: Bake
- Bake at 375°F (190°C) for 20–25 minutes until golden brown and crispy. Serve warm.
