Step 1: Sauté the vegetables
- I melt butter in a large pot. I add onion, carrots, and celery. I cook them until soft. The kitchen already smells amazing. You will notice the veggies turn tender and glossy.

Step 2: Add garlic and broth
- I stir in garlic and cook for a few seconds. Then I pour in chicken broth. I bring everything to a gentle boil. This builds the base flavor of the soup.

Step 3: Cook the rice
- I add the rice to the pot. I lower the heat and let it simmer. I stir occasionally so the rice cooks evenly and does not stick.

Step 4: Add chicken and seasoning
- I add shredded chicken, salt, pepper, and thyme. I simmer the soup until the rice is soft and the chicken is heated through.

Step 5: Final taste check
- I taste the soup and adjust the seasoning. Once done, I turn off the heat. Your soup is ready to serve warm.

Notes
I love serving this soup hot with warm dinner rolls or crusty bread. You can add a small side salad for balance.
